Dell UltraSharp U2723QE or LG 27GP850?

I'm on the hunt for a new 27-inch monitor primarily for productivity (coding and document editing), but I also want something decent for occasional gaming. The Dell U2723QE seems great with its IPS Black panel for deeper blacks and supposedly better contrast, which I value for long hours of screen time. However, the LG 27GP850 is often praised for its gaming performance due to the faster response time and higher refresh rate. I'm torn between prioritizing image quality and gaming responsiveness. My budget is around $500-$600. Is the Dell's improved contrast worth sacrificing the LG's edge in gaming? I'm running an RTX 3070, so I can take advantage of the higher refresh rate, but I'm not a super competitive gamer.
